
Thanks to Mo the diva who is currently sipping endless authentic Vietnamese coffee and Pho.. (sigh, wish I could do the same..), she made us this yummy pastry with sweet potato so I am reliving what she made for us... (it was a very memorable time consuming those pastries as we were riding in a bus traveling back from a funeral)... as morbid as it sounds, it is not that bad, alright..!
RECIPE:
1 Sweet potato boiled, peeled then mashed
2 Ready made puff pastry
INSTRUCTIONS:**Heat up oven at 180 degrees
1. Boil sweet potato until soft on a low heat
2. Remove skin
*TIPS on removing potato skin*
Remove potato from the hot boiling water and IMMEDIATELY dump it into cold water. This will help you peel off your potato skin real easy!
3. Cut potato into slices.
If you're lazy, you can STOP RIGHT NOW, and finish up all of it... but if you're adventurous.. continue reading.. :)
4. Mash it up
5. Cut your pastry in however shape and size you want...
6. Fill the mashed potato towards the middle of the pastry
7. Roll it up tight, and seal the ends together so that when you bake and the pastry expands, it will not open up and lose it's shape
8. Bake for 15 minutes or when it turns golden brown and crisp
9. DONE! :)
10. Transfer them from the baking tray to cool down
